Burrata is a fresh cheese, made from a mix of cow’s milk mozzarella and cream, which originated in the Apulia region of Italy. Burrata is made by forming a the outer layer with thin mozzarella and forming a ball into which milk and stracciatella – strips of mozzarella – are placed. the ball is then tied off. This authentic Italian food staple is a great addition to cold antipasti platters and makes for the perfect, light dish on a warm summer’s day.
